Set to launch mid-January 2015, Chop Bloc is a US-style steakhouse and cocktail bar opening in the heart of Chelmsford in Essex. With no sign of bling or fakery in sight (or bite), Chop Bloc specialises in high-quality cuts of meat that are butchered and dry-aged at the restaurant and offered at affordable prices. This is one steakhouse you’ll want to try out – chop-chop!

What’s your beef? Well, that’s up to you. Choose your cut, which is sold by the gram, including bone-in cuts aged and chopped on site – a rarity in the UK. And don’t miss Chop Bloc’s burgers, which will be made in-house using 28-day matured British chuck steak and cooked using the traditional 1940’s American ‘smash’ technique to create a crust on the outside while leaving a juicy burger on the inside. Sides will be fuss-free to let the meat do the talking, while desserts will feature homemade cheesecake and a chocolate brownie for those with a sweet tooth.

The concept has been reared by brothers Steve and Dave Patten together with the help of their father – meat industry pioneer and liveryman of The Worshipful Company of Butchers, Colin Patten. The brothers have extensive experience in the meat industry, having worked for market-leading meat companies and trained in all aspects of the farm-to-fork process. With decades of meaty experience between them, they’ll be putting the finest cuts on the table at reasonable prices, sourced from the very best grass-fed Herefordshire cattle, all dry-aged and sliced in house.

Spread over three floors, Chop Bloc is housed in an impressive 18th century former brewery, with space for 200 diners across the ground and first floor together with an upstairs Manhattan-style cocktail bar, the Bloc Bar. The overall look will be simple and inviting – think heavy woods, rich leathers and exposed brick, with the aged meat displayed downstairs in full view of diners.

(yes 10 out of 10 seems a bit over the top...read on...or call me on the mobile to verify my independence...)
As a newcomer to Chelmsford for work, I walked past the great brewery conversion last week and went inside just to look......3 hours later I emerged after excellent service, drink, food and an education from the co-founder!
This venue is a delight for anyone interested in any of architectural conversions with a modern twist, cocktails or really really good steak (and accompaniments)!
I initially was tempted by the nice ambiance and decor of the top floor Bloc bar on a quiet Monday - just intending to look for a possible future visit. I got talking to the ever-attentive Jamie (head Bar tender) on the top (3rd) floor and then Dave Patten of the father and sons team who created and manage this amazing place.
Soon after an Estrella Damm and a superb custom-made Rum cocktail, I was tempted by a bite to eat....after a great education of the sourcing of the beef from Hereford cattle and the careful supply chain management from Dave, (and seeing him have a special marinated beef steak which he kindly let me sample (superb!) I opted for this first visit for a Rump Steak and Chipotle chips, with a house Merlot.
SUPERB! While not a frequent steak eater, this was excellent, after a detailed discussion about all aspects of food and drink (mostly food, truth be told) I have a much higher appreciation of the effort involved - and the value and quality going into the meat dishes here. You are getting equivalent or better steak here thanks to the family background at maybe 30% LESS than equivalent other restaurants! In addition he has some top kitchen staff ex-Gaucho Grill....In addition I now appreciate the added justification for a bit extra for the well made sauces with fresh natural ingredients, as well as the service charge going genuinely to the waiting AND kitchen staff. As a bonus, the chipotle chips were gorgeous! (apparently quality tasted by Dave for consistency for many months!)
(and re the negative reviews it seems as you will no doubt read that some feeble fold do not communicate at the time - when the staff will surely address any questions - and just go home and sadly write poor reviews.... in some cases from new fake accounts when they have not even been here!)
With a great combination of style, ambiance, food, drink and customer service this looks and feels and tastes to me the best venue to have a evening meal in town!

Really cool restaurant in Chelmsford. I've been here a few times now and thoroughly enjoy it. Most recently, I went to a hen do that ended up in the bar which was great! It's nice to finally get some London quality food outside of the city.
