Set to launch mid-January 2015, Chop Bloc is a US-style steakhouse and cocktail bar opening in the heart of Chelmsford in Essex. With no sign of bling or fakery in sight (or bite), Chop Bloc specialises in high-quality cuts of meat that are butchered and dry-aged at the restaurant and offered at affordable prices. This is one steakhouse you’ll want to try out – chop-chop!
What’s your beef? Well, that’s up to you. Choose your cut, which is sold by the gram, including bone-in cuts aged and chopped on site – a rarity in the UK. And don’t miss Chop Bloc’s burgers, which will be made in-house using 28-day matured British chuck steak and cooked using the traditional 1940’s American ‘smash’ technique to create a crust on the outside while leaving a juicy burger on the inside. Sides will be fuss-free to let the meat do the talking, while desserts will feature homemade cheesecake and a chocolate brownie for those with a sweet tooth.
The concept has been reared by brothers Steve and Dave Patten together with the help of their father – meat industry pioneer and liveryman of The Worshipful Company of Butchers, Colin Patten. The brothers have extensive experience in the meat industry, having worked for market-leading meat companies and trained in all aspects of the farm-to-fork process. With decades of meaty experience between them, they’ll be putting the finest cuts on the table at reasonable prices, sourced from the very best grass-fed Herefordshire cattle, all dry-aged and sliced in house.
Spread over three floors, Chop Bloc is housed in an impressive 18th century former brewery, with space for 200 diners across the ground and first floor together with an upstairs Manhattan-style cocktail bar, the Bloc Bar. The overall look will be simple and inviting – think heavy woods, rich leathers and exposed brick, with the aged meat displayed downstairs in full view of diners.
